Korean BBQ Chicken Tacos

It’s a weird twist on tacos, but these Korean BBQ Chicken Tacos featuring my Pineapple Pico de Gallo recipe are simply incredible. This fusion dish brings together the smoky & sweet flavors of Korean BBQ with the crunch of crispy taco shells and a fresh, fruity salsa. Here's how to make it:

Ingredients:

  • Boneless chicken thighs

  • The Original Korean Bulgogi BBQ Sauce (blue label with "We Love You")

  • Yellow corn tortillas (preferably from Rodriguez Bakery, not Mission)

  • Pineapple Pico de Gallo (see my recipe)

  • Small Batch Fermenters Pineapple Habanero Hot Sauce (optional, but recommended)

Instructions:

  1. Marinate the Chicken:

    • Place the boneless chicken thighs in a bowl and cover with The Original Korean Bulgogi BBQ Sauce.

    • Marinate for about 30 minutes to allow the flavors to meld.

  2. Grill the Chicken:

    • Preheat your grill to medium-high heat.

    • Grill the marinated chicken thighs over an open flame, brushing with additional BBQ sauce when you flip them.

    • Cook until the chicken is fully cooked and has a nice char.

  3. Prepare the Tortillas:

    • Heat a pan over medium heat.

    • Shallow fry the yellow corn tortillas until they start to bubble. (Please don’t ever use Mission Tortillas with my recipe. Go to De Leons!”)

    • Using tongs, fold each tortilla in half to form a taco shell.

    • Continue frying until the taco shells are golden and crispy, but not so hard that they crack when filled.

    • Drain on paper towels.

  4. Assemble the Tacos:

    • Once the chicken is cooked, chop it into thumbnail-sized pieces. (Just like Chipotle does to their overly salted chicken)

    • Fill each taco shell with the chopped chicken and a generous helping of Pineapple Pico de Gallo.

  5. Serve and Enjoy:

Pro Tip: The Pineapple Habanero Hot Sauce adds a perfect touch of heat that complements the sweet and tangy Pineapple Pico de Gallo.
